The Perfect Supper

Everyone has their own ideas about what the perfect supper includes.  Over the years it changes as your tastes change.  It evolves from macaroni and cheese to hot dogs.  When I was a teenager it was undoubtedly pizza.  These days I have found that a very simple combination is what I crave most.  A baked sweet potato with butter, sauteed kale and a grilled bone-in pork chop.  So easy, well balanced and delicious.  The prep is so easy, just preheat the oven for the potato, prick with a fork and bake for 45-55 minutes depending on the size.  I prefer the sweet potato, while my husband usually likes a regular baking potato.  The cook times are very close so we can each have what we want.  The thick cut bone in pork chops grilled with a light steak seasoning and a little Worcestershire sauce are as good and satisfying as a steak on a spring night!  The kale is in season this time of year and is readily available and often on sale.  I saute it with olive oil, onions (sometimes a few thin strips of center cut bacon as well) season it generously with salt and pepper, adding chicken stock to steam it and finish with a few dashes of red wine vinegar.  The Perfect Supper!
