Twice Baked Broccoli and Cheese Potato – 411 calories for 2 halves
- 1 Medium Potato
- 1 C Steamed Broccoli
- 1 Slice Center Cut Bacon, Fried
- 1/4 C Cheddar Jack Cheese
- 2 Tbsp Light Sour Cream
- 2 Tbsp Spread made with Yogurt (Brummel and Brown)
- 1 tsp Smoked Paprika
- 1 Tbsp Parsley, Green Onion or other fresh herb
Bake potato at 375 for 45 min or until easily pierced with a fork. Cut in half and scoop out insides.
While the potato is baking, mix Brummel and Brown, Sour Cream, Paprika, Salt and Pepper.
And fry up a couple of slices of center cut bacon.
Steam broccoli. Let cool and dice into small pieces.
Mix potato filling, sour cream mixture and broccoli gently together. Fill Potato skin halves with mixture.
Top with cheese. Broil for 2-3 minutes or until cheese is melted.
Top with parsley and bacon and serve! For a hungry husband add chili, leftover meat or increase the quantity.
